> Before the training course
One month before the training course begins, ask each EU delegation to send you 2 typical (and not too difficult) recipes from their country (1 main dish and 1 sweet, for 1 full meal). Draw their attention on the fact that they have to choose ingredients that you can find at the current season and in the venue you are (otherwise they should bring them when joining the training course).
Share those recipes with your cooks so that they can include them in the menu.
> During the training course
Invite the participants to present the dish they propose the day it is served. Beyond the dish in itself, encourage them to highlight the stories or social rituals that go with it during the meal.
